The Origin of Sauteed Shredded Pork with Sweet Bean Sauce

Sauteed Shredded Pork with Sweet Bean Sauce is traditional special dish in Beijing, It has a very similar proper way to eat with Peking roast duck. Holding a piece of Tofu skin in diner's hand, picks up some shredded meat, places them in the center of the skin and adding some spring onion, fold it and eating, Oh, so delicious!

A old men Mr.Chen and his grandchildren lives alone in Beijing during Qing Dynasty, Chen had sold the Tofu and skin for eke a bare existence, he had consistently followed the high quality meals for customers, his small business regarded with great favor and approval by the general public and some restaurants, include the famous Quanjude Restaurant.

One day, Chen standed to reason that delivered the rationed Tofus and skins to the Quanjude Restaurant, For wide knowledge and experience, he let his grandchildren came with him on this time. Be caused by bad diet during a normal day, The smell of Peking roast duck from the kitchen made the yound kid's mouth water, So the kid told his grandfather that want to eat the duck, Chen was feel under compulsion to accept and appointed on traditional New Year's food. but he didn't care for this thing.

The next Spring Festival was coming, Before to eating New Year's food, the grandchildren asked "where is the duck", Chen began to remembered that his promised, but there was only some pork, unsold Tofu skins and some onions in family, he had no means and decided to try it by himself.

Chen had shred pork into long and thin strips and marinate for 30 minutes, add pork strings and stir fry until done. Fry the bean sauce mixture until fragrant, add pork and stir thoroughly and sprinkle with some cooked sesame. Served with Tofu skins and shredded spring onion. at last, the special dish was finished and eating by the same way with Peking duck, his grandchildren was so satisfied with this 'duck'.

Many years later, the kid was grown up and became the chef of the Quanjude Restaurant, he could eat the Peking duck every day, but he always marvel why is so different taste with the 'duck' on the New Year's night. So he should to consult his grandfather, and he was so agitate, touched, and excite by the truth, then he opened up a new dish and made it going on now for hundreds years, Chinese call it 'Jing Jiang Rou Si'.
